1 red pepper
1 t. fresh rosemary, minced
1 t. fresh thyme, minced
1 t. black pepper, coarsely ground
(4) 6 oz. orange roughy fillets
Non-fat cooking spray
1.Coat the grill with cooking spray and preheat for 5 minutes. Slice the zucchini, red peppers, onions and carrots.
2.In a small bowl, combine the rosemary, thyme, and pepper.
3.Place the vegetables on the grill and drizzle 1/2of the herbs over them.
4.Grill for 5 minutes.
5.Move the vegetables to the sides of the grill and then add the fillets. Drizzle the remaining herbs over the fillets.
6.Grill for 4-6 minutes, or until the fish flakes easily and the vegetables are tender.
7.To serve, carefully remove the fillets from the grill and top with the vegetables.
